I got my tile from http://www.mosaictilesupplies.com/ and it came with paper backing (actually, the paper was on the front and you wet it down to peel it off). It was easier in that it kept the tile very uniform. The difficulty was keeping the thinset from coming through to the front since you can't...

I agree with lynxwiler. A nice grout line is enough to finish off mosaic tile. But another way to go is to add a layer of drywall to flush it out with the tile. That requires a bit of finessing with tile backing and drywall thicknesses. I did it both ways in my new bathroom. See the pictures attache...
